Pump-over is an essential step in winemaking. It involves drawing off the must (grape juice undergoing alcoholic fermentation) from the bottom of the tank and bringing it back up over the cap of skins and seeds that rises to the surface. This process extracts color and tannins, while also promoting oxygenation and balance in the wine.
